3 Lunchbox Ideas (That Happen to Be GF + DF)

Hello!

This week I've got three lunchbox ideas that have a little bonus - they're all gluten and dairy free.

Even if allergies aren't something you need to navigate, they're still easy, family-friendly recipes worth adding to the lunchbox rotation. We've got something savoury, something chocolatey, and something you don't even need to turn the oven on for.

🐟 Salmon Patties

These little salmon patties are ready in under 20 minutes and are just as good cold as they are warm, which makes them a really handy lunchbox option.

They're made with canned salmon, carrot and ground almonds, and are naturally gluten and dairy free.

πŸͺ Chocolate Chip Chickpea Cookies

Yes, there really are chickpeas hiding in these chocolate chip cookies!

They're soft, chocolatey and made without wheat, dairy, eggs or nuts - so they're a useful recipe to have up your sleeve when you're catering for different dietary needs.

And most importantly, my kids genuinely love them.

🍫 Chocolate Bliss Balls

Five ingredients, two steps and no baking required - that's my kind of Sunday prep.

These chocolate bliss balls are made with sunflower seeds, dates, raisins, cocoa and coconut oil. They're nut, dairy, egg and gluten free, and easy to stash in the freezer ready for future lunchboxes.

Hopefully there's something here to pop into next week's lunchboxes - whether you need gluten and dairy free ideas or simply want something different in the rotation.

And remember, you don't need to make all three. One batch in the freezer is still a win!
