Midweek Meals: Dinner, But Make It Fun

Midweek dinners don't always need to be sensible casseroles and one-pot wonders.

Sometimes it's nice to put something on the table that's just a bit more fun to eat - especially when everyone can get involved and make dinner their own.

So this week's Midweek Meals are colourful, family-friendly and a little more playful.

๐ŸŒฎ Taco Bar

This is one of my favourite ways to do family dinner.

Put a selection of taco fillings and toppings on the table, then let everyone decide what โ€” and how much โ€” goes on their plate.

It's relaxed, it's easy to adapt to different preferences, and leftovers from other meals can absolutely become taco fillings too. Anything goes!

๐Ÿ  Loaded Kumara Chips

Chips for dinner? I'm in!

These loaded kumara chips turn a tray of homemade kumara fries into a colourful family meal with cheese, bacon, corn, spinach and tomatoes piled on top.

They're on the table in around 25 minutes, and you can easily swap the toppings around to suit your family.

๐ŸŒถ๏ธ Mexican Pasta

Pasta night meets taco night!

This Mexican-inspired pasta is a true one-pan meal, with beef mince, beans, capsicum and pasta all cooking together in the sauce.

Less washing up, plenty of flavour, and something a little different for the midweek dinner rotation.

Hopefully one of these puts a little more fun into dinner this week.

And if your child's idea of a taco is a tortilla with cheese and precisely nothing else... that's okay too.
