Two Breakfast Wins: Strawberries in Pancakes & the Perfect Bowl of Porridge

Hello!

Mornings can feel like a sprint, especially with kids. Someone can’t find their shoes, someone else suddenly hates the breakfast they loved yesterday, and you haven’t had a sip of your coffee yet.

So today I’m sharing two simple, reliable breakfast ideas that feel a little special but are still completely doable on a busy morning.

Alhtough I note... pancakes are really a weekend thing in our house! Unless I've saved some from an earlier batch, then I just pop them in the toaster to heat them up!

Both are flexible, family-friendly, and easy to adjust depending on what you’ve got in the pantry.

Enjoy!

🍓 Strawberry Pancakes

These strawberry pancakes are soft, fluffy, and naturally sweet from real strawberries. They feel fun (pink pancakes are always a win), but they’re made with simple ingredients and come together easily.

They’re perfect for:

  • Weekend breakfasts
  • A special start to the school day
  • Or even breakfast-for-dinner

You can use fresh or frozen strawberries, and they freeze beautifully - which makes future mornings much easier.

🥣 Perfect Oatmeal

Sometimes simple really is best. A warm bowl of oatmeal (or porridge for the Kiwis (me), Aussies and Brits) is one of those steady, nourishing breakfasts that keeps little tummies satisfied and energy levels more stable through the morning.

This post walks you through how to get the texture just right — not gluey, not runny — plus lots of topping ideas so everyone can customise their own bowl.

It’s budget-friendly, adaptable, and works for toddlers right through to grown-ups.

Whether your mornings are calm or chaotic (or somewhere in between), breakfast doesn’t have to be complicated to be nourishing.

Take what works for your family, adapt as needed, and remember - you’re doing a great job.
